This is what I have so far:

Apollo is by far one of the most interesting gods featured in Greek and Roman mythology and there are many stories told about his heroism, love affairs, inventions, and contests. The son of Zues and Leto and the twin brother of Artemis, he is the god of music (one of his symbols being the lyre), colonization, prophecy, medicine, archery (but not for hunting or war), poetry, dance, and he took care of herds and flocks. Although he is a god he fell in love with many humans and even had children with some of them, the most well known being Asclepius and Orpheus. He is often seen with bow and arrows, on his head a laurel crown, the cithara (or lyre) and a plectrum (basiclly a pick).

I'm just listing things and I don't know how to end it!

First off, it might be good to add that, mainly, he was the god of the sun.

And I imagine that this essay explains the myths revolving around Apollo, so you might want to close it off with something like this:

“However, this amazing figure would be nothing without the stories of his accomplishments.”

Of course, that’s only one idea. feel free to tweak and change as you like, or not use it at all.

    Apollo

Apollo, in Greek mythology, one of the most important OLYMPIAN gods; son of
ZEUS and Leto, twin brother of ARTEMIS. He was concerned with prophecy,
medicine (he was the father of ASCLEPIUS), music and poetry (he was also the
father of ORPHEUS and the patron of the MUSES), and the pastoral arts. A moral
god of high civilization, he was associated with law, philosophy, and the arts. He
was widely known as a god of light, Phoebus Apollo; after the 5th cent. B.C. he
    was often identified with the sun god HELIOS. Apollo’s oracles had great authority;
his chief shrine was at DELPHI, where he was primarily a god of purification. In art
he was portrayed as the perfection of youth and beauty. The most celebrated
statue of him is the Apollo Belvedere, a marble copy of the original Greek bronze,
now in the Vatican in Rome.

Its always fun to end paragraphs with a quote but its quite difficult to find a meaningful one about Apollo.

So I guess something like “In the reticulum of Greek myths involving Apollo, it becomes apparent that his fame is warranted due to his feats and accomplishments”… or just another general statement that sums up the point of your essay
